Ingredients
- 1/4 cup olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 cups potatoes, peeled and diced

Directions
- Heat the olive oil in a large skillet over medium heat.

- Transfer the potato mixture to a large bowl and add the flaked salmon, breadcrumbs, and eggs and mix until combined.
- Form the mixture into patties and place on a parchment-lined baking sheet.
- Bake in a preheated 375°F oven for 20 minutes or until golden brown.
