Ingredients

  • 1/2 cup of butter, at room temperature
  • 1 cup of brown sugar
  • 1 egg
  • 1 teaspoon of vanilla extract
  • 1 1/2 cups of all-purpose flour
  • 1/3 cup of cocoa powder
  • 1 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1/2 cup of buttermilk
  • 1/2 cup of marshmallow fluff

Directions

  1. Preheat oven to 350°F (175°C).
  2. Cream together the butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract and mix until combined.
  4. In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt.
  5. Add the dry ingredients to the wet ingredients in two batches, alternating with the buttermilk.
  6. Drop spoonfuls of the batter onto a parchment-lined baking sheet, about 2 inches apart.
  7. Bake for 10-12 minutes, or until the cookies are firm to the touch.
  8. Let cool completely before filling with marshmallow fluff.
  9. Spread the marshmallow fluff onto the flat side of one cookie, then top with another cookie to make a sandwich.
  10. Repeat with the remaining cookies.
