Ingredients
- 1/2 cup of butter, at room temperature
- 1 cup of brown sugar
- 1 egg
- 1 teaspoon of vanilla extract
- 1 1/2 cups of all-purpose flour
- 1/3 cup of cocoa powder
- 1 teaspoon of baking soda
- 1/4 teaspoon of salt
- 1/2 cup of buttermilk
- 1/2 cup of marshmallow fluff
Directions
- Preheat oven to 350°F (175°C).
- Cream together the butter and sugar until light and fluffy.
- Add the egg and vanilla extract and mix until combined.
- In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt.
- Add the dry ingredients to the wet ingredients in two batches, alternating with the buttermilk.
- Drop spoonfuls of the batter onto a parchment-lined baking sheet, about 2 inches apart.
- Bake for 10-12 minutes, or until the cookies are firm to the touch.
- Let cool completely before filling with marshmallow fluff.
- Spread the marshmallow fluff onto the flat side of one cookie, then top with another cookie to make a sandwich.
- Repeat with the remaining cookies.
