Ingredients

  • 2 tablespoons vegetable oil
  • 1 lb. chicken breast, cut into 1-inch cubes
  • 1/4 cup peanuts
  • 1 red bell pepper, sliced
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 1 teaspoon red pepper flakes

Directions

  1. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until lightly browned, about 5 minutes.
  2. Add the peanuts, bell pepper, soy sauce, brown sugar, rice vinegar, and red pepper flakes to the skillet. Stir to combine.
  3. Reduce the heat to medium-low and simmer, stirring occasionally, until the chicken is cooked through, about 10 minutes.
