Ingredients

  • 2 tablespoons olive oil
  • 1 pound tilapia fillets
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pint cherry tomatoes
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey

Directions

  1. Preheat the oven to 375 degrees F.
  2. In a large bowl, combine the olive oil, tilapia fillets, garlic powder, onion powder, oregano, salt, and pepper. Mix to combine.
  3. Spread the tilapia fillets out on a baking sheet. Roast in the preheated oven for 10 minutes.
  4. While the tilapia is baking, heat a large skillet over medium-high heat. Add the cherry tomatoes and cook until lightly charred, about 5 minutes.
  5. In a small bowl, whisk together the balsamic vinegar and honey. Add the mixture to the skillet with the tomatoes and cook for another minute.
  6. Remove the tilapia from the oven and top with the charred tomatoes and balsamic reduction. Enjoy!
