Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup white sugar
  • 1/2 cup butter, melted and cooled
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream, divided
  • 1/2 cup strawberry jam
  • 1/4 cup powdered sugar

Directions

  1. Preheat oven to 350°F (175°C). Grease an 8x8-inch baking pan with butter.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the sugar and butter until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  4. Gradually beat in the dry ingredients until just combined. Stir in 1/4 cup of the heavy cream.
  5. Spread the batter evenly into the prepared pan. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
  6. In a medium bowl, mix together the strawberry jam and remaining cream until well blended.
  7. Spread the strawberry mixture over the top of the cake. Sprinkle with powdered sugar.
  8. Let cool completely before serving.
