Ingredients

  • 3 large potatoes, peeled and diced
  • 1 onion, diced
  • 4 slices of bacon, diced
  • 1/2 cup of grated cheese
  • Salt and pepper to taste
  • 2 tablespoons of butter

Directions

  1. Preheat oven to 350 degrees F.
  2. In a large skillet, cook the bacon until it is crispy. Remove from the heat and set aside.
  3. In the same skillet, add the butter and heat until melted. Add the onions and potatoes and cook until the potatoes are tender, about 10 minutes.
  4. Add the bacon back into the skillet and season with salt and pepper. Cook for a few more minutes.
  5. Transfer the potato mixture to a 9x13-inch baking dish and top with grated cheese.
  6. Bake for 25 minutes or until the cheese is melted and golden brown.
