Ingredients

  • 2 boneless, skinless chicken breasts, cut into cubes
  • 1 teaspoon blackening seasoning
  • 1 teaspoon olive oil
  • 4 cups baby spinach
  • 1/2 cup red onion, thinly sliced
  • 1/3 cup feta cheese, crumbled
  • 1/4 cup lemon juice
  • 1 tablespoon minced garlic
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the cubed chicken with the blackening seasoning and 1 teaspoon of olive oil.
  2. Heat a large skillet over medium-high heat. Add the chicken to the skillet and cook until golden brown and cooked through, about 5 minutes.
