Kosher Salt Encrusted Prime Rib Roast

Ingredients

  • 3-4 lb. prime rib roast
  • 1/2 cup of kosher salt
  • 2 tablespoons of dried herbs (such as oregano, rosemary, thyme, and/or basil)
  • 4 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of freshly ground black pepper

Directions

  1. Preheat oven to 450°F (232°C).
  2. In a small bowl, mix together the kosher salt, herbs, garlic, olive oil, and black pepper.
  3. Place the prime rib roast on a rack in a roasting pan. Rub the salt mixture all over the roast.
  4. Roast in the preheated oven for 20 minutes, then reduce the heat to 325°F (163°C).
  5. Continue roasting for 1 1/2 to 2 hours, or until an instant-read thermometer registers 130°F (54°C) for medium-rare.
  6. Remove from the oven and let rest for 15 minutes before slicing and serving.
