Ingredients

  • 1 teaspoon olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 jalapeno, seeded and chopped
  • 2 cups cooked chicken, shredded or cut into cubes
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 can (10.75 oz) cream of chicken soup
  • 1 can (4.5 oz) chopped green chiles
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • 6-8 corn tortillas, cut into strips
  • 2 cups shredded Cheddar cheese
  • 1/4 cup chopped fresh cilantro, plus more for garnish
  • Sour cream, for garnish

Directions

  1. Preheat oven to 350°F.
  2. Heat olive oil in a large skillet over medium heat. Add onion, bell pepper, garlic, and jalapeno and cook, stirring occasionally, for about 5 minutes, or until vegetables are softened.
  3. Add chicken, tomatoes, cream of chicken soup, green chiles, chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper. Stir to combine. Cook for about 10 minutes, or until chicken is cooked through and sauce is thickened.
  4. Spread 1/3 of the chicken mixture in the bottom of a 9x13-inch baking dish. Top with a layer of tortilla strips. Top with 1/2 of the remaining chicken mixture, followed by another layer of tortilla strips. Top with the remaining chicken mixture and then sprinkle with cheese.
  5. Bake for 25 minutes, or until cheese is melted and bubbly.
  6. Garnish with cilantro and serve with sour cream.
