Directions
Preheat oven to 350°F.
Heat olive oil in a large skillet over medium heat. Add onion, bell pepper, garlic, and jalapeno and cook, stirring occasionally, for about 5 minutes, or until vegetables are softened.
Add chicken, tomatoes, cream of chicken soup, green chiles, chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper. Stir to combine. Cook for about 10 minutes, or until chicken is cooked through and sauce is thickened.
Spread 1/3 of the chicken mixture in the bottom of a 9x13-inch baking dish. Top with a layer of tortilla strips. Top with 1/2 of the remaining chicken mixture, followed by another layer of tortilla strips. Top with the remaining chicken mixture and then sprinkle with cheese.
Bake for 25 minutes, or until cheese is melted and bubbly.
Garnish with cilantro and serve with sour cream.
