Ingredients
- 1 lb boneless skinless chicken breasts, diced
- 1/4 cup soy sauce
- 1/4 cup honey
- 1/4 cup hoisin sauce
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 tablespoon olive oil
- 3 cups cooked white rice
- 1/4 cup green onions, chopped
Directions
- Place the diced chicken in a bowl and set aside.
- In a separate bowl, mix together the soy sauce, honey, hoisin sauce, garlic, and ginger.
- Pour the mixture over the chicken and stir to coat.
- Open the lid of the Instant Pot and select the sauté function. Add the olive oil to the pot and heat until it is hot.
- Add the chicken and sauce to the pot and sauté for 5-7 minutes, stirring frequently.
- Once the chicken is cooked through, select the “cancel” button to turn off the sauté mode.
- Place the lid on the pot and select the “manual” setting. Set the timer for 5 minutes.
- Once the timer is up, carefully do a quick release of the pressure.
- Open the lid and stir in the cooked white rice.
- Serve the Mongolian Chicken over the cooked rice and garnish with chopped green onions.
