Ingredients

  • 1 lb boneless skinless chicken breasts, diced
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1/4 cup hoisin sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 tablespoon olive oil
  • 3 cups cooked white rice
  • 1/4 cup green onions, chopped

Directions

  1. Place the diced chicken in a bowl and set aside.
  2. In a separate bowl, mix together the soy sauce, honey, hoisin sauce, garlic, and ginger.
  3. Pour the mixture over the chicken and stir to coat.
  4. Open the lid of the Instant Pot and select the sauté function. Add the olive oil to the pot and heat until it is hot.
  5. Add the chicken and sauce to the pot and sauté for 5-7 minutes, stirring frequently.
  6. Once the chicken is cooked through, select the “cancel” button to turn off the sauté mode.
  7. Place the lid on the pot and select the “manual” setting. Set the timer for 5 minutes.
  8. Once the timer is up, carefully do a quick release of the pressure.
  9. Open the lid and stir in the cooked white rice.
  10. Serve the Mongolian Chicken over the cooked rice and garnish with chopped green onions.
