Ingredients

  • 1 1/2 cups gluten-free flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 ripe bananas, mashed
  • 1/2 cup pitted dates, chopped
  • 1 teaspoon vanilla extract
  • 1/2 cup almond milk
  • 1/4 cup chopped walnuts, optional

Directions

  1. Preheat oven to 350°F (176°C). Grease a 9x5-inch loaf pan with cooking spray and set aside.
  2. In a large bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt. Set aside.
  3. In a medium bowl, mash the ripe bananas until smooth. Add the chopped dates, vanilla extract, almond milk, and walnuts (if using). Stir to combine.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan and spread evenly. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
