- 1 1/2 cups gluten-free flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 ripe bananas, mashed
- 1/2 cup pitted dates, chopped
- 1 teaspoon vanilla extract
- 1/2 cup almond milk
- 1/4 cup chopped walnuts, optional
Directions
- Preheat oven to 350°F (176°C). Grease a 9x5-inch loaf pan with cooking spray and set aside.
- In a large bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt. Set aside.
- In a medium bowl, mash the ripe bananas until smooth. Add the chopped dates, vanilla extract, almond milk, and walnuts (if using). Stir to combine.
- Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and spread evenly. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
