Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can kidney beans, drained and rinsed
- 1 can diced tomatoes
- 2 cups beef broth
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped green onions
Directions
- In a large pot, brown the ground beef over medium heat until cooked through. Drain any excess fat.
- Add the onion and garlic to the pot and sauté until softened.
- Stir in the kidney beans, diced tomatoes, beef broth, chili powder, cumin, paprika, salt, and pepper.
- Bring the soup to a simmer and let cook for 30 minutes, stirring occasionally.
- Taste and adjust seasonings as needed.
