Ingredients

  • 2 pounds ground beef
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 bell peppers, diced
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) pinto beans, drained and rinsed
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (6 ounces) tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 cup beef broth
  • 1 tablespoon olive oil
  • Optional toppings: shredded cheese, sour cream, chopped green onions, sliced jalapenos

Directions

  1. In a large pot or Dutch oven, heat olive oil over medium heat.
  2. Add ground beef and cook until browned. Drain any excess fat.
  3. Add diced onion, minced garlic, and diced bell peppers to the pot. Cook until vegetables are tender.
  4. Stir in chili powder, cumin, paprika, oregano, salt, black pepper, and cayenne pepper. Cook for 1-2 minutes to toast the spices.
  5. Add crushed tomatoes, tomato paste, drained kidney beans, drained black beans, drained pinto beans, and beef broth to the pot. Stir to combine.
  6. Bring the chili to a simmer and let it cook for at least 30 minutes, stirring occasionally.
  7. Taste and adjust seasonings if needed.
