  • Fresh cilantro, for garnish

Directions

  1. Start by rinsing the rice under cold water until the water runs clear. This will remove any excess starch.
  2. In a large skillet or pan, heat the vegetable oil over medium heat.
  3. Add the chopped onion and minced garlic to the pan and sauté until they become translucent and fragrant.
  4. Add the rice to the pan and stir well to coat it with the oil and onion mixture. Cook for 2-3 minutes, or until the rice starts to turn golden brown.
  5. Stir in the tomato puree, chili powder, cumin powder, and salt. Mix well to evenly distribute the spices.
  6. Pour in the chicken or vegetable broth and bring the mixture to a boil.
  7. Reduce the heat to low, cover the pan, and let the rice simmer for about 15-20 minutes, or until all the liquid is absorbed and the rice is tender.
  8. If using optional vegetables, add the frozen peas, diced carrots, and diced bell peppers to the pan during the last 5 minutes of cooking, stirring occasionally.
  9. Remove the pan from the heat and let it sit, covered, for an additional 5 minutes to allow the flavors to meld.
