Ingredients
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1 cup raisins
- 1 cup diced apples
- 1/2 cup chopped pecans
- 1/2 cup light brown sugar
- 1/4 cup butter, melted
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
- In a medium bowl, cream together the 1/2 cup butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
- Combine the flour, baking powder and salt; stir into the creamed mixture alternately with the milk. Fold in the raisins, apples and pecans.
- Pour into the prepared pan. Bake for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- In a medium bowl, mix together the brown sugar, 1/4 cup melted butter and pecans. Spread over the top of the cake. Bake for an additional 30 minutes.
- Cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
