- Transfer the dough onto a lightly floured surface and knead for 5 minutes until smooth and elastic. Shape into a ball, cover with a clean dish towel, and let it rest for 30 minutes.
- Meanwhile, prepare the filling by heating olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent.
- Add the chopped spinach to the skillet and cook for 2-3 minutes until wilted. Remove from heat.
- In a separate bowl, combine the cooked spinach and onion mixture with sumac, lemon juice, salt, and pepper. Mix well to incorporate all the flavors.
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- On a floured surface, roll out the dough to a thickness of about 1/8 inch. Using a round cookie cutter or a glass, cut out circles of dough.
