Ingredients
1 can of Spam, diced
1 tablespoon of olive oil
1 onion, sliced
3 cloves of garlic, minced
1 bell pepper, diced
1/2 teaspoon of smoked paprika
1/2 teaspoon of dried oregano
Salt and pepper to taste
1/4 cup of white wine
1/2 cup of chicken broth
1/4 cup of chopped fresh parsley
Directions
Heat the olive oil in a large skillet over medium heat.
Add the onion and garlic and cook for 2-3 minutes, stirring occasionally, until the onion is soft and translucent.
Add the bell pepper, smoked paprika, oregano, and a pinch of salt and pepper. Cook for 2-3 minutes.
Add the diced Spam and cook for an additional 2-3 minutes, stirring occasionally.
Add the white wine and chicken broth and bring to a simmer. Simmer for 5 minutes.
Add the chopped parsley and stir to combine. Simmer for an additional 5 minutes.
Serve and enjoy!
