Ingredients

  • 1 can of hominy, drained and rinsed
  • 6 strips of bacon, diced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of chili powder
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • 1/4 cup of cilantro, chopped

Directions

  1. In a large skillet over medium heat, cook the bacon until crispy.
  2. Add the onion and garlic, and cook until the onion is soft and translucent.
  3. Stir in the chili powder, paprika, and cumin, and cook for 1 minute.
  4. Add the hominy and season with salt and pepper to taste.
  5. Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
  6. Stir in the cilantro and cook for an additional 5 minutes.
  7. Serve hot.
