1/2 bunch asparagus, trimmed and cut into 1-inch pieces
4 large eggs
1 tablespoon chopped fresh parsley
Directions
Preheat oven to 375°F. Grease a 9-inch baking dish with butter.
In a medium saucepan, melt the butter over medium heat. Add the garlic and cook until fragrant, about 1 minute. Add the cream, salt, pepper, and nutmeg and stir to combine. Simmer for 3 minutes, stirring occasionally.
Add the Parmesan cheese and stir until melted. Add the asparagus and stir to coat. Cook until the asparagus is just tender, about 3 minutes.
Spread the asparagus mixture in the prepared baking dish. Make 4 wells in the mixture and crack an egg into each. Bake for 15 minutes, or until the eggs are cooked to your desired doneness. Sprinkle with parsley and serve.
