Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 small onion, chopped
  • 2 cloves of garlic
  • 1/4 cup fresh parsley
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp baking powder
  • Salt and pepper to taste
  • 1/3 cup flour
  • Oil for frying

Directions

  1. In a food processor, combine chickpeas, onion, garlic, parsley, cumin, coriander, baking powder, salt, and pepper. Pulse until mixture is well combined but still slightly chunky.
  2. Transfer mixture to a bowl and stir in flour until well incorporated. Cover and refrigerate for 1-2 hours.
  3. Heat oil in a pan over medium heat. Form chickpea mixture into small patties and fry until golden brown on both sides, about 3-4 minutes per side.
