Ingredients
- 1 cup red lentils, rinsed and drained
- 2 cups water
- 1 tablespoon vegetable oil

- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- 1 can diced tomatoes

Directions
- In a large pot, combine the red lentils and water. Bring to a boil, then reduce heat and simmer for 20 minutes or until lentils are soft.
- In a separate pan, heat the vegetable oil over medium heat. Add the onion and garlic, and sauté until translucent.
- Add the cumin seeds, turmeric, coriander, and cayenne pepper to the pan with the onions and garlic. Cook for 2-3 minutes until fragrant.
