This spicy Indian lentil stew, also known as daal, is a comforting and flavorful dish that will warm you up on a chilly evening. Made with red lentils, tomatoes, onions, and a mix of fragrant spices, this dish is perfect served over rice or with warm naan bread.

Ingredients

  • 1 cup red lentils, rinsed and drained
  • 2 cups water
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 1 can diced tomatoes
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Directions

  1. In a large pot, combine the red lentils and water. Bring to a boil, then reduce heat and simmer for 20 minutes or until lentils are soft.
  2. In a separate pan, heat the vegetable oil over medium heat. Add the onion and garlic, and sauté until translucent.
  3. Add the cumin seeds, turmeric, coriander, and cayenne pepper to the pan with the onions and garlic. Cook for 2-3 minutes until fragrant.
  4. Add the diced tomatoes to the spice mixture and cook for another 5 minutes.
  5. Pour the tomato mixture into the pot with the cooked lentils. Stir well and season with salt and pepper.
  6. Simmer the daal for another 10-15 minutes to allow the flavors to meld together.
  7. Serve the spicy Indian lentil stew garnished with fresh cilantro and enjoy over rice or with warm naan bread.
