Ingredients
2 cups couscous
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
2 tablespoons dried oregano
1 teaspoon dried thyme
1/2 cup chopped fresh parsley
1/2 cup chopped fresh mint
1/4 cup chopped Kalamata olives
1/4 cup crumbled feta cheese
Salt and pepper to taste
Directions
Bring 2 cups of salted water to a boil in a medium pot.
Add the couscous to the pot and stir, then reduce the heat to low and cover.
Simmer for about 5 minutes, until the couscous is tender.
Drain any excess water from the pot.
In a large skillet, heat the olive oil over medium heat.
Add the onion and garlic and sauté until the onion is softened, about 5 minutes.
Add the oregano, thyme, parsley, mint, olives and feta cheese and cook for 2 minutes.
Add the couscous to the skillet and stir to combine.
Season with salt and pepper to taste.
Serve immediately.
