Ingredients

  • 2 cups couscous
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons dried oregano
  • 1 teaspoon dried thyme
  • 1/2 cup chopped fresh parsley
  • 1/2 cup chopped fresh mint
  • 1/4 cup chopped Kalamata olives
  • 1/4 cup crumbled feta cheese
  • Salt and pepper to taste

Directions

  1. Bring 2 cups of salted water to a boil in a medium pot.
  2. Add the couscous to the pot and stir, then reduce the heat to low and cover.
  3. Simmer for about 5 minutes, until the couscous is tender.
  4. Drain any excess water from the pot.
  5. In a large skillet, heat the olive oil over medium heat.
  6. Add the onion and garlic and sauté until the onion is softened, about 5 minutes.
  7. Add the oregano, thyme, parsley, mint, olives and feta cheese and cook for 2 minutes.
  8. Add the couscous to the skillet and stir to combine.
  9. Season with salt and pepper to taste.
  10. Serve immediately.
