Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 1 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk or sour milk
- 1 cup of your favorite jam
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9 inch round cake pan.
- In a medium bowl, combine flour, baking powder, baking soda and salt. Set aside.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla. Beat in the flour mixture alternately with the buttermilk; begin and end with the flour mixture.
- Spread half of the batter into the prepared pan. Spoon jam over the batter. Cover with remaining batter.
- Bake in preheated oven for 35 to 40 minutes, or until a skewer inserted into the center of the cake comes out clean. Cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
