Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk or sour milk
  • 1 cup of your favorite jam

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9 inch round cake pan.
  2. In a medium bowl, combine flour, baking powder, baking soda and salt. Set aside.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla. Beat in the flour mixture alternately with the buttermilk; begin and end with the flour mixture.
  4. Spread half of the batter into the prepared pan. Spoon jam over the batter. Cover with remaining batter.
  5. Bake in preheated oven for 35 to 40 minutes, or until a skewer inserted into the center of the cake comes out clean. Cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
