- 1 pound Italian sausage, casings removed
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 zucchini, diced
- 1 can (14.5 ounces) diced tomatoes
- 1 can (8 ounces) tomato sauce
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- Salt and pepper, to taste
- 1 package (16 ounces) potato gnocchi
- 1 cup shredded mozzarella cheese
- Fresh basil, for garnish
Directions
- In a large skillet, cook the Italian sausage over medium heat until browned and cooked through. Break it up into crumbles using a wooden spoon.
- Add the diced onion and minced garlic to the skillet. Cook for 2-3 minutes, until the onion is translucent.
- Add the diced bell peppers and zucchini to the skillet. Cook for an additional 3-4 minutes, until the vegetables start to soften.
- Stir in the diced tomatoes, tomato sauce, dried basil, dried oregano, red pepper flakes, salt, and pepper. Bring the mixture to a simmer and let it cook for 5 minutes.
- Meanwhile, prepare the gnocchi according to package instructions. Drain well.
- Add the cooked gnocchi to the skillet and toss it in the sauce until well coated.
