Ingredients

  • 4 slices of rustic bread
  • 8 thin slices of Colonnata lard
  • 2 cloves of garlic, peeled
  • 8 cherry tomatoes, halved
  • fresh basil leaves, to garnish
  • extra virgin olive oil, for drizzling
  • salt and pepper to taste

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Place the bread slices on a baking sheet and drizzle each slice with olive oil.
  3. Toast the bread in the oven until golden and crispy, about 5-7 minutes.
  4. While the bread is toasting, rub each slice with a garlic clove.
  5. Top each slice with two slices of Colonnata lard.
  6. Place the bruschette back in the oven for a minute to slightly melt the lard.
  7. Remove from the oven and season with salt and pepper.
  8. Place two cherry tomato halves on top of each bruschetta.
  9. Garnish with fresh basil leaves.
  10. Drizzle with a little extra virgin olive oil.
  11. Serve immediately and enjoy!
