Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 4 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup ricotta cheese
  • 1/2 cup marzipan
  • 1/2 cup confectioners' sugar

Directions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, stir together the flour, baking powder, and salt.
  3. In a large bowl, beat together the sugar, eggs, butter, and vanilla until light and fluffy.
  4. Stir in the flour mixture until just combined.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  6. Allow the cake to cool completely.
  7. Meanwhile, in a medium bowl, stir together the ricotta cheese and marzipan until combined.
  8. Spread the ricotta mixture over the cooled cake. Sprinkle with confectioners' sugar.
