Ingredients

  • 2 tablespoons butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups of cooked small shell pasta
  • 1/4 cup grated Parmesan cheese

Directions

  1. Melt the butter in a large stockpot over medium-high heat.
  2. Add the diced onion and cook for about 5 minutes, stirring occasionally, until softened.
  3. Add the garlic and cook for another minute.
  4. Add the flour and stir for about 1 minute until the flour is completely incorporated.
  5. Slowly add in the chicken broth, stirring as you add it.
  6. Bring the soup to a boil, then reduce heat and simmer for about 10 minutes.
  7. Stir in the heavy cream, salt, and pepper, and simmer for another 5 minutes.
  8. Add the cooked pasta and simmer for another 5 minutes.
  9. Stir in the Parmesan cheese, and serve the soup hot.
