Ingredients

  • 1 cup heavy cream

  • 2 tablespoons water
  • 1 pound fresh strawberries, hulled and quartered
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest

Directions

  1. In a saucepan, combine the heavy cream, milk, and sugar. Scrape the seeds from the vanilla bean and add them to the saucepan along with the pod. Heat the mixture over medium heat until it starts to simmer, stirring occasionally to dissolve the sugar.
  2. Remove the saucepan from the heat. Add the chopped white chocolate and stir until melted and smooth.
  3. In a small bowl, sprinkle the gelatin powder over the water and let it sit for 5 minutes to bloom.
  4. Place the saucepan with the cream mixture back on low heat, and whisk in the bloomed gelatin until fully dissolved.
  5. Remove the saucepan from the heat and let the mixture cool slightly. Remove the vanilla bean pod.
  6. Using a fine-mesh sieve, strain the mixture into individual serving glasses or ramekins. Refrigerate for at least 4 hours, or until set.
