Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 jalapeno pepper, seeded and minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups low-sodium chicken broth
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 can (4 ounces) diced green chilies
  • 1 cup frozen corn kernels
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime
  • Optional toppings: avocado, sour cream, shredded cheese, chopped green onions

Directions

  1. Turn on the Instant Pot and select the Saute function.
  2. Add the olive oil, onion, garlic, and jalapeno pepper.
  3. Saute for 2-3 minutes until the onion is translucent.
  4. Add the chicken breasts, cumin, oregano, coriander, smoked paprika, and cayenne pepper (if using).
  5. Cook for 2-3 minutes, stirring occasionally, until the chicken is lightly browned.
  6. Pour in the chicken broth and scrape the bottom of the pot to release any browned bits.
  7. Add the white beans, diced green chilies, and frozen corn kernels.
  8. Season with salt and pepper to taste.
  9. Close the lid of the Instant Pot and set it to Manual/Pressure Cook mode.
  10. Cook on high pressure for 10 minutes.
  11. Once the cooking time is up, allow the pressure to release naturally for 10 minutes, then do a quick release to release any remaining pressure.
  12. Remove the chicken breasts from the pot and shred them using two forks.
  13. Return the shredded chicken to the pot and stir well.
  14. Stir in the chopped cilantro and lime juice.
  15. Taste and adjust the seasoning if necessary.
