Ingredients

  • For the cake:
  • - 1 cup active sourdough starter

  • - 1/4 cup unsalted butter, melted

Directions

  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Add half of the dry ingredients to the butter mixture and mix until just combined.

  7. Gradually add the buttermilk, alternating with the dry ingredients, beginning and ending with the dry ingredients. Mix until just combined.

  10. Pour half of the cake batter into the prepared baking dish, spreading it evenly.
  11. Sprinkle half of the streusel topping over the batter.
  12. Carefully spread the remaining cake batter over the streusel layer and top with the remaining streusel.
  13. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  14. Allow the coffee cake to cool in the baking dish for 10-15 minutes before serving.
