Ingredients
- 1 tablespoon olive oil
- 1 large onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 teaspoon minced garlic
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups long grain white rice
- 1 (14.5 ounce) can diced tomatoes
- 1 (14.5 ounce) can chicken broth
- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/2 cup frozen green peas
- 1/4 cup fresh cilantro, chopped
Directions
- Turn the Instant Pot to sauté mode and heat the oil. Add the onion, bell peppers, garlic, cumin, oregano, paprika, salt, and pepper. Cook until the vegetables are softened, about 5 minutes.
- Add the rice, tomatoes, chicken broth, and chicken pieces. Stir to combine.
- Lock the lid in place and turn the Instant Pot to manual pressure cook mode for 8 minutes.
- Quick release the pressure when the cooking cycle is complete. Remove the lid and stir in the peas and cilantro.
- Serve warm.
