1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
1/2 cup frozen green peas
1/4 cup fresh cilantro, chopped
Directions
Turn the Instant Pot to sauté mode and heat the oil. Add the onion, bell peppers, garlic, cumin, oregano, paprika, salt, and pepper. Cook until the vegetables are softened, about 5 minutes.
Add the rice, tomatoes, chicken broth, and chicken pieces. Stir to combine.
Lock the lid in place and turn the Instant Pot to manual pressure cook mode for 8 minutes.
Quick release the pressure when the cooking cycle is complete. Remove the lid and stir in the peas and cilantro.
Serve warm.
