Ingredients

  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon black pepper
  • 1 pound boneless, skinless chicken breasts
  • 1 cup quinoa, rinsed
  • 4 cups chicken broth

Directions

  1. Set the instant pot to sauté and add the olive oil, onion, garlic, carrots, celery, salt, Italian seasoning, and black pepper.
  2. Sauté for 3-4 minutes until vegetables are softened.
  3. Add the chicken breasts, quinoa, and chicken broth and stir to combine.
  4. Secure the lid and set the pressure valve to sealing. Select the manual/pressure cook setting and adjust the time to 5 minutes.
  5. When the cooking cycle is complete, allow the pressure to naturally release for 10 minutes before quick releasing any remaining pressure.
  6. Carefully remove the chicken breasts and shred with two forks.
  7. Return the chicken to the soup and stir to combine. Serve and enjoy!
