Ingredients

  • 1/2 lb shrimp, cooked and peeled
  • 1/4 cup goat cheese, crumbled
  • 1/2 cup watermelon, cubed
  • 1/4 cup mixed greens
  • 1 tablespoon olive oil
  • 2 teaspoons lemon juice
  • Salt and pepper to taste

Directions

  1. In a medium bowl, mix together the olive oil, lemon juice, salt, and pepper to make a dressing.
  2. In a separate bowl, combine the cooked shrimp, goat cheese, and watermelon cubes.
  3. Add the dressing to the shrimp, goat cheese, and watermelon mixture and mix until evenly coated.
  4. Divide the mixed greens onto four plates.
  5. Divide the shrimp, goat cheese, and watermelon mixture into four portions and stack each portion on top of the mixed greens.
  6. Serve immediately.
