Ingredients
- 1/2 lb shrimp, cooked and peeled
- 1/4 cup goat cheese, crumbled
- 1/2 cup watermelon, cubed
- 1/4 cup mixed greens
- 1 tablespoon olive oil
- 2 teaspoons lemon juice
- Salt and pepper to taste
Directions
- In a medium bowl, mix together the olive oil, lemon juice, salt, and pepper to make a dressing.
- In a separate bowl, combine the cooked shrimp, goat cheese, and watermelon cubes.
- Add the dressing to the shrimp, goat cheese, and watermelon mixture and mix until evenly coated.
- Divide the mixed greens onto four plates.
- Divide the shrimp, goat cheese, and watermelon mixture into four portions and stack each portion on top of the mixed greens.
- Serve immediately.
