Remove the core from the cabbage and place it in a large pot with enough boiling water to cover it. Boil for 10 minutes, then remove from the water and allow to cool. Carefully peel away the leaves from the cabbage and set aside.
In a large bowl, combine the ground beef, ground pork, cooked rice, onion, garlic, tomato paste, paprika, thyme, oregano, salt, pepper, and nutmeg. Mix until everything is well combined.
Lay a cabbage leaf flat and spoon some of the meat mixture into the center. Fold the sides of the leaf over the meat and roll up tightly. Repeat with the remaining leaves and meat mixture.
Add the bay leaves and vegetable broth to the large pot and bring to a boil. Gently add the cabbage rolls to the broth and reduce the heat to low. Simmer for 45 minutes, stirring occasionally.
Remove the bay leaves and add the chopped parsley. Simmer for an additional 15 minutes. Serve hot.
