Ingredients

  • 1 lb Andouille sausage, sliced
  • 1 lb chicken breast, diced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 3 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 cup chicken broth
  • 1 cup long grain white rice
  • 2 tsp Cajun seasoning
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1 lb shrimp, peeled and deveined
  • Salt and pepper to taste
  • Chopped green onions and parsley for garnish

Directions

  1. Set Instant Pot to sauté mode and cook the Andouille sausage until browned. Remove and set aside.
  2. In the same pot, add chicken and cook until browned. Add onion, bell pepper, celery, and garlic. Cook until vegetables are tender.
  3. Stir in diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, paprika, and cayenne pepper. Season with salt and pepper.
  4. Close the lid and set Instant Pot to manual high pressure for 10 minutes.
  5. Once the timer goes off, quick release the pressure. Stir in shrimp and cover with lid. Let sit for 5 minutes until shrimp are cooked.
  6. Garnish with green onions and parsley before serving.
