Ingredients
- 1 lb Andouille sausage, sliced
- 1 lb chicken breast, diced
- 1 onion, chopped
- 1 bell pepper, chopped
- 3 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 1 cup chicken broth
- 1 cup long grain white rice
- 2 tsp Cajun seasoning
- 1 tsp dried thyme
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 lb shrimp, peeled and deveined
- Salt and pepper to taste
- Chopped green onions and parsley for garnish
Directions
- Set Instant Pot to sauté mode and cook the Andouille sausage until browned. Remove and set aside.
- In the same pot, add chicken and cook until browned. Add onion, bell pepper, celery, and garlic. Cook until vegetables are tender.
- Stir in diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, paprika, and cayenne pepper. Season with salt and pepper.
- Close the lid and set Instant Pot to manual high pressure for 10 minutes.
- Once the timer goes off, quick release the pressure. Stir in shrimp and cover with lid. Let sit for 5 minutes until shrimp are cooked.
- Garnish with green onions and parsley before serving.
