Instant Pot Butter Chicken from Frozen

Ingredients

  • 2 pounds of frozen chicken breasts
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 teaspoon of garam masala
  • 1 teaspoon of ground cumin
  • 1/4 teaspoon of cayenne pepper
  • 1/2 teaspoon of salt
  • 1/4 cup of butter
  • 1 can (14 oz) of tomato sauce
  • 1 can (14 oz) of coconut milk
  • 1/4 cup of fresh cilantro, chopped

Directions

  1. Turn Instant Pot on to the “Saute” setting. Add the butter and let it melt. Add the onion and garlic and saute until the onion is soft, about 2-3 minutes.
  2. Add the garam masala, cumin, cayenne pepper, and salt and stir to combine. Add the frozen chicken breasts and stir to coat with the spices.
  3. Add the tomato sauce and coconut milk and stir to combine. Secure the lid and press the “Manual” or “Pressure Cook” button, making sure the pressure is set to “High.” Set the timer for 10 minutes.
  4. When the timer is done, let the pressure release naturally for 10 minutes, then carefully do a quick release of the remaining pressure. Open the lid and stir the sauce. The chicken should be cooked through and the sauce should be creamy.
  5. Add the cilantro and stir to combine. Serve the butter chicken over cooked rice or with naan bread.
