Ingredients

  • 2 tablespoons of butter
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 3 tablespoons of all-purpose flour
  • 5 cups of chicken or vegetable broth
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of nutmeg
  • 1/2 cup of half-and-half
  • 2 (10-ounce) packages of frozen chopped spinach, thawed and drained

Directions

  1. In a large pot, melt the butter over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the flour and stir until the flour is completely incorporated, about 1 minute.
  4. Add the broth, salt, pepper, and nutmeg. Stir to combine and bring to a simmer.
  5. Add the half-and-half and spinach and stir to combine.
  6. Continue to simmer until the soup is hot and thickened, about 10 minutes.
  7. Serve hot.
