Ingredients
- 2 tablespoons of butter
- 1 onion, chopped
- 2 cloves of garlic, minced
- 3 tablespoons of all-purpose flour
- 5 cups of chicken or vegetable broth
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 teaspoon of nutmeg
- 1/2 cup of half-and-half
- 2 (10-ounce) packages of frozen chopped spinach, thawed and drained
Directions
- In a large pot, melt the butter over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the flour and stir until the flour is completely incorporated, about 1 minute.
- Add the broth, salt, pepper, and nutmeg. Stir to combine and bring to a simmer.
- Add the half-and-half and spinach and stir to combine.
- Continue to simmer until the soup is hot and thickened, about 10 minutes.
- Serve hot.
