Ingredients

  • 2 tablespoons butter
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 potatoes, peeled and cubed
  • 4 cups chicken broth
  • Salt and pepper to taste
  • Optional: 1/2 cup heavy cream (for a creamier soup)

Directions

  1. In a large pot, melt butter over medium heat.
  2. Add onion and garlic and cook until softened, about 5 minutes.
  3. Stir in potatoes and chicken broth and bring to a boil.
  4. Reduce heat to low and simmer for 15 minutes, or until potatoes are tender.
  5. Using an immersion blender, puree soup until desired consistency is reached.
  6. Season with salt and pepper to taste.
  7. Optional: Stir in heavy cream for a creamier soup.
