Ingredients

  • 1 cup popcorn kernels
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup chopped peanuts or almonds (optional)

Directions

  1. In a large pot, melt butter over medium-high heat.
  2. Add brown sugar, corn syrup, and vanilla extract and stir until combined.
  3. Add popcorn kernels to the pot and stir until coated with the caramel mixture.
  4. Cover the pot with a lid and reduce heat to low. Shake the pot occasionally to prevent the popcorn from burning.
  5. Once the popcorn is done popping, remove from heat and stir in baking soda.
  6. Spread the popcorn onto a greased baking sheet and sprinkle chocolate chips and chopped nuts over the top.
  7. Bake in a preheated 350°F oven for 10 minutes.
  8. Remove from oven and let cool before serving.
