Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream

Directions

  1. Preheat the oven to 350°F. Grease a 9-inch springform pan.
  2. In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of the prepared pan.
  3. In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla, cinnamon, ginger, cloves, cardamom, nutmeg, and black pepper.
  4. Pour batter over crust and smooth the top. Bake for 45-50 minutes or until the center is set.
  5. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour. Remove from oven and let cool completely before refrigerating for at least 4 hours.
  6. In a small saucepan, heat heavy cream over medium heat until steaming. Remove from heat and add chai tea bag. Let steep for 5 minutes, then remove tea bag and let cream cool.
  7. Serve cheesecake topped with chai-infused whipped cream and a sprinkle of cinnamon.
