- 1 1/2 cups graham cracker crumbs

Directions
- Preheat the oven to 350°F. Grease a 9-inch springform pan.
- In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of the prepared pan.
- In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla, cinnamon, ginger, cloves, cardamom, nutmeg, and black pepper.

- Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour. Remove from oven and let cool completely before refrigerating for at least 4 hours.
- In a small saucepan, heat heavy cream over medium heat until steaming. Remove from heat and add chai tea bag. Let steep for 5 minutes, then remove tea bag and let cream cool.
