This recipe is a delicious Thai twist on traditional spring rolls, filled with fresh vegetables, vermicelli noodles, and flavorful herbs. Perfect for a light and healthy appetizer or snack.

Ingredients

  • 8 rice paper wrappers
  • 1 cup vermicelli noodles, cooked and drained
  • 1 carrot, julienned
  • 1 cucumber, julienned
  • 1 red bell pepper, thinly sliced
  • 1/2 cup fresh herbs (mint, cilantro, Thai basil)
  • 1/4 cup roasted peanuts, crushed
  • Soy sauce and sesame oil for dipping

Directions

  1. Fill a large bowl with warm water. Dip one rice paper wrapper at a time into the water, making sure it is completely covered.
  2. Lay the soaked rice paper on a clean, damp kitchen towel.
  3. Layer some vermicelli noodles, carrots, cucumber, bell pepper, herbs, and crushed peanuts on the bottom third of the rice paper.
  4. Fold the sides of the rice paper over the filling, then roll tightly from the bottom to form a spring roll.
  5. Repeat with remaining ingredients.
  6. Serve the spring rolls with soy sauce and sesame oil for dipping.
