This healthier version of fried rice substitutes rice with cauliflower, making it lower in carbs and calories but equally delicious. Packed with vegetables, protein, and flavor, this recipe is a perfect weeknight dinner option.
Ingredients
- 1 head of cauliflower
- 2 tablespoons of vegetable oil
- 2 eggs, beaten
- 1 onion, chopped
- 2 carrots, diced
- 1 cup of frozen peas
- 3 cloves of garlic, minced
- 3 tablespoons of soy sauce
- 1 teaspoon of sesame oil
- 1/2 cup of green onions, chopped
- Salt and pepper to taste
Directions
- Cut the cauliflower into florets and pulse in a food processor until it resembles rice. Set aside.
- In a large pan, heat 1 tablespoon of vegetable oil over medium heat. Add the beaten eggs and scramble until cooked. Remove from pan and set aside.
- In the same pan, add the remaining tablespoon of oil and sauté the onion, carrots, peas, and garlic until tender.
- Add the cauliflower rice to the pan and cook for 5-7 minutes, stirring occasionally.
- Stir in the soy sauce, sesame oil, and cooked eggs. Season with salt and pepper.
- Cook for an additional 2-3 minutes until everything is heated through.
- Remove from heat and sprinkle with chopped green onions before serving.
