This healthier version of fried rice substitutes rice with cauliflower, making it lower in carbs and calories but equally delicious. Packed with vegetables, protein, and flavor, this recipe is a perfect weeknight dinner option.

Ingredients

  • 1 head of cauliflower
  • 2 tablespoons of vegetable oil
  • 2 eggs, beaten
  • 1 onion, chopped
  • 2 carrots, diced
  • 1 cup of frozen peas
  • 3 cloves of garlic, minced
  • 3 tablespoons of soy sauce
  • 1 teaspoon of sesame oil
  • 1/2 cup of green onions, chopped
  • Salt and pepper to taste

Directions

  1. Cut the cauliflower into florets and pulse in a food processor until it resembles rice. Set aside.
  2. In a large pan, heat 1 tablespoon of vegetable oil over medium heat. Add the beaten eggs and scramble until cooked. Remove from pan and set aside.
  3. In the same pan, add the remaining tablespoon of oil and sauté the onion, carrots, peas, and garlic until tender.
  4. Add the cauliflower rice to the pan and cook for 5-7 minutes, stirring occasionally.
  5. Stir in the soy sauce, sesame oil, and cooked eggs. Season with salt and pepper.
  6. Cook for an additional 2-3 minutes until everything is heated through.
  7. Remove from heat and sprinkle with chopped green onions before serving.
