This chai spice cheesecake combines the creamy richness of traditional cheesecake with the warm, aromatic flavors of chai spices. Perfect for a special occasion or just to treat yourself to something delicious.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 1/4 cup sugar
  • 2 teaspoons chai spice mix
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 325°F.
  2. In a medium bowl, mix graham cracker crumbs, melted butter, sugar, and 1 teaspoon of chai spice mix. Press mixture into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in sour cream, vanilla extract, and remaining chai spice mix.
  4. Pour cream cheese mixture over crust in the pan. Place pan on a baking sheet to catch any drips. Bake for 45-50 minutes or until center is almost set.
  5. Remove from oven and let cool. Refrigerate for at least 4 hours or overnight before serving.
  6. Top with whipped cream and a sprinkle of chai spice mix before serving.
