Ingredients

  • 1 1/2 cups all-purpose flour

  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks

Directions

  1. In a large mixing bowl, combine flour, sugar, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  2. Gradually add ice water, 1 tablespoon at a time, and mix until the dough comes together.
  3. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
  4. Preheat your oven to 375°F (190°C).
  5. On a lightly floured surface, roll out the chilled dough into a circle that's about 12 inches in diameter.
  6. Transfer the rolled-out dough to a 9-inch tart pan with a removable bottom. Press the dough gently into the pan, trimming any excess. Prick the bottom of the crust with a fork.
  7. Line the crust with parchment paper or aluminum foil and fill it with pie weights or dried beans to prevent it from puffing up during baking.
