Ingredients

  • 1 1/2 cups all-purpose flour

  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks

Directions

  1. In a large mixing bowl, combine flour, sugar, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  2. Gradually add ice water, 1 tablespoon at a time, and mix until the dough comes together.
  3. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
  4. Preheat your oven to 375°F (190°C).
  5. On a lightly floured surface, roll out the chilled dough into a circle that's about 12 inches in diameter.
  6. Transfer the rolled-out dough to a 9-inch tart pan with a removable bottom. Press the dough gently into the pan, trimming any excess. Prick the bottom of the crust with a fork.
  7. Line the crust with parchment paper or aluminum foil and fill it with pie weights or dried beans to prevent it from puffing up during baking.
  8. Bake the crust in the preheated oven for 15 minutes. Then, remove the weights and parchment paper and bake for an additional 10 minutes, or until lightly golden. Set aside to cool.

  12. Pour the custard into the cooled tart crust and spread it evenly. Smooth the top with a spatula.
