Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup chickpea flour
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon red chili powder
  • Salt to taste
  • 1 cup water
  • 1/2 cup finely chopped onions
  • 1/2 cup finely chopped tomatoes
  • 2 green chilies, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • Oil for cooking

Directions

  1. In a large mixing bowl, combine all-purpose flour, chickpea flour, turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well.
  2. Gradually add water to the mixture and whisk until you get a smooth batter. Let the batter rest for 10 minutes.
  3. Heat a non-stick skillet over medium-high heat and brush it with a little oil.
  4. Pour a ladleful of batter onto the skillet and spread it in a circular motion to make a thin crepe.
  5. Cook the crepe on both sides until golden brown and crispy. Remove from the skillet and set aside.
  6. Repeat the process with the remaining batter to make more crepes.
  7. In a separate pan, heat a tablespoon of oil and sauté the onions and green chilies until the onions turn translucent.
  8. Add the tomatoes and cook until soft.
  9. Season the mixture with salt, cumin powder, and coriander powder. Mix well and cook for another 2-3 minutes.
  10. Place a spoonful of the filling on each crepe and roll it up.
  11. Garnish with fresh cilantro and serve hot.
