This creamy cheesecake features a chocolate cookie crust and a smooth Guinness-infused chocolate filling, topped with a whipped cream and chocolate ganache. Perfect for St. Patrick's Day or any special occasion.

Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 4 eggs
  • 1 cup Guinness stout
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Directions

  1. Preheat oven to 350°F.
  2. Mix chocolate cookie crumbs and melted butter, press into bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat cream cheese, sugar, and vanilla extract until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. In a small saucepan, heat Guinness until warm. Add chocolate chips and stir until melted.
  6. Fold Guinness-chocolate mixture into cream cheese mixture.
  7. Pour batter over crust in pan and smooth top.
  8. Bake for 50-60 minutes, or until center is set.
  9. Cool cheesecake in oven with door slightly open, then chill in fridge for at least 4 hours.
  10. In a small saucepan, heat heavy cream until simmering. Pour over chocolate chips and let sit for 2 minutes.
  11. Stir ganache until smooth, then pour over chilled cheesecake.
  12. Top with whipped cream and chocolate shavings before serving.
