This Spicy Corn Chowder is a hearty and flavorful soup that combines the sweetness of corn with the kick of spices. Perfect for a cozy dinner on a cold evening, this chowder is easy to make and will warm you up from the inside out.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeno pepper, diced
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 4 cups corn kernels
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Directions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, red bell pepper, and jalapeno pepper. Saute until vegetables are soft, about 5 minutes.
  2. Stir in the cumin and paprika, then add the corn kernels and vegetable broth. Bring to a simmer and cook for 15 minutes.
  3. Using an immersion blender, puree about half of the soup to thicken it. Alternatively, you can transfer half of the soup to a blender and blend until smooth, then return it to the pot.
  4. Stir in the heavy cream and season with salt and pepper. Simmer for another 10 minutes.
  5. Serve the Spicy Corn Chowder hot, garnished with chopped cilantro.
