Ingredients

  • 2 pheasants, cleaned and dressed
  • 1 cup red wine
  • 1/2 cup chicken broth
  • 2 tablespoons butter
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 375°F
  2. Season the pheasants with salt and pepper, inside and out
  3. In a large skillet, melt the butter over medium heat
  4. Add the shallot and garlic, sauté until fragrant
  5. Place the pheasants breast-side down in the skillet, cook until browned
  6. Transfer the pheasants to a roasting pan, breast-side up

  10. Cover the roasting pan with foil, roast in the oven for 30 minutes
  11. Remove the foil, baste the pheasants with the sauce
  12. Roast for an additional 15-20 minutes, until cooked through
  13. Serve the pheasants with the red wine sauce on the side
