Ingredients

  • 10 lbs ripe tomatoes, peeled and chopped
  • 2 onions, diced
  • 6 cloves of garlic, minced

  • 1 tbsp salt
  • 1 tsp black pepper
  • 1/2 cup sugar
  • 1/4 cup red wine vinegar

Directions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onions and garlic, and sauté until translucent.
  3. Add the chopped tomatoes, basil, oregano, salt, pepper, sugar, and red wine vinegar.
  4. Simmer the sauce on low heat for 90 minutes, stirring occasionally.
  5. Using an immersion blender, blend the sauce until smooth.
  6. Bring the sauce to a boil and cook for an additional 30 minutes.
  7. Ladle the hot sauce into sterilized jars, leaving 1/2 inch of headspace.
  8. Wipe the rims clean, then place the lids on the jars and tighten the bands.
  9. Process the jars in a boiling water bath for 35 minutes.
  10. Remove the jars from the water bath and let them cool completely before storing in a cool, dark place.
