Ingredients

  • 1 box of cake mix
  • 1/3 cup of oil
  • 3 large eggs
  • 1/2 cup of water
  • 24 flat-bottomed waffle ice cream cones
  • 1/2 cup of butter, softened
  • 4 cups of powdered sugar
  • 1 teaspoon of vanilla extract
  • 2-3 tablespoons of milk
  • Assorted food coloring
  • Sprinkles, for decorating

Directions

  1. Preheat oven to 350 degrees F. Line two cupcake pans with cupcake liners.
  2. In a large bowl, mix together the cake mix, oil, eggs, and water until combined.
  3. Fill each ice cream cone about 2/3 full with the cake batter and place in the cupcake pans.
  4. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
  5. Remove cupcakes from the oven and let cool completely.
  6. In a large bowl, cream together the butter and powdered sugar until light and fluffy.
  7. Add the vanilla extract and milk and mix until combined.
  8. Divide the frosting into small bowls and color each one with a different food coloring.
  9. Frost each cupcake with the desired color of frosting and top with sprinkles.
